Alfredo Sauce
4 tbs unsalted butter
1/2 cup flour
4 cups skim milk
1 pinch nutmeg
2 tsp kosher salt
1 tsp black pepper
2 cups shredded mozzarella
In a large saucepan over medium heat, melt the butter. Add the flour and cook for five minutes, whisking often. While it cooks, put the skim milk in a microwave safe bowl and heat in the microwave for five minutes. Gradually add the warmed milk to the butter/ flour mixture, whisking constantly as you add the liquid (alternatively, add a quarter of the milk at a time and whisk briskly between each addition). Continue to whisk the mixture until the flour and butter is completely incorporated into the milk and there are no lumps. Add the nutmeg, salt, and pepper. Continue cooking over medium heat until the sauce thickens and coats the back of a spoon, about 10 minutes. Turn the heat to low. Add the mozzarella. Keep the sauce over low heat and whisk until the cheese is melted.
