Cheesy Sausage Muffins (adapted from Dine & Dish)
(Makes about 15 muffins)
2 cups all purpose flour
2 tbs sugar
1 tbs baking powder
1/4 tsp Kosher salt
1/2 tsp garlic powder
1/2 tsp cracked black pepper
1 tsp of your favorite spice blend (I used Weber Kick’n Chicken)
1 egg
1 cup skim milk
1/4 cup vegetable oil
3/4 cup shredded sharp cheddar cheese
1/2 cup shredded smoked gouda cheese
10 links cooked turkey sausage, thinly sliced
Preheat the oven to 400. Liberally grease 15 muffin cups. Combine the dry ingredients in a medium bowl and mix well. In another medium bowl, combine the egg, milk, and oil. Whisk until well mixed. Add the dry ingredients and mix until the dry ingredients are just absorbed. Fold in the cheeses and turkey sausage. Let the mixture stand for five minutes. Give it one final mix before portioning into the muffin cups. The cups should be about 2/3 full. Bake for 15 minutes until the tops are golden and a toothpick inserted into the center of one of the muffins comes out clean.
