3 small zucchini
1/2 cup Vintage Grand Ewe (or other hard cheese such as parmesan)
Olive oil
Salt and pepper
Preheat the oven to 375. Line a cookie sheet with foil. Sliced the zucchini into rounds, about 1/4 inch thick. Arrange the slices of zucchini on the cookie sheet in a single layer. Coat the zucchini with olive oil. Add 1/2 teaspoon each of salt and pepper. Toss to coat the zucchini. Bake for 30 minutes until the zucchini starts to brown. Remove from the oven and flip the slices over. Sprinkle them with the cheese and put them back in the oven for another 10 to 15 minutes until the cheese is melted and slightly browned.
