Zucchini Boats

1 Large Zucchini (12-15 inches)
½ cup Panko Breadcrumbs
½ cup Grated Parmesan
½ cup Bacon (Cooked and Crumbled)
½ tsp Salt
¼ tsp Pepper
1 Egg
Extra Virgin Olive Oil

Preheat the oven to 375 degrees. Peel skin off the zucchini. Slice the zucchini in half lengthwise. Using a spoon, scoop out the inside bits and discard. In a bowl, mix together the breadcrumbs, parmesan, bacon, salt, and pepper. Beat the egg slightly in a smaller bowl, then stir into the breadcrumb mixture. Stuff the breadcrumb mixture into the caverns you dug out in each zucchini half. Put the zucchini on a lightly greased cookie sheet and lightly drizzle the tops of the zucchini with the olive oil. Cover with foil and bake for 30 minutes. Then take the foil off and continue to cook for an additional 15-30 minutes, or until the zucchini is fork tender.
